Celestial Rice Bowls: Pineapple, Beef, and Shrimp Delights

Ingredients:

• 1 whole pineapple

• 1 cup basmati rice

1 tablespoon avocado oil

• 1/2 pound shrimp, peeled and deveined

• 1/2 pound ground beef

• 1 small onion, diced

• 2 cloves garlic, minced

• 1 bell pepper, diced

• 2 tablespoons soy sauce

• 1 tablespoon oyster sauce

• 1 tablespoon brown sugar

• Salt and pepper to taste

• Green onions, chopped, for garnish

• Sesame seeds, for garnish

Directions

1. Prepare the pineapple by cutting it in half lengthwise. Scoop out the flesh from both halves, leaving the shells intact. Cut the pineapple flesh into chunks and set aside.

2. Rinse the basmati rice under cold water until the water runs clear. Cook the rice according to package instructions and set aside.

3. In a large skillet or wok, heat the avocado oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.

4. In the same skillet, add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Remove any excess fat.

5. Add the diced onion, minced garlic, and diced bell pepper to the skillet with the ground beef. Cook for 3-4 minutes until the vegetables are softened.

6. Stir in the pineapple chunks, soy sauce, oyster sauce, and brown sugar. Cook for another 2-3 minutes, allowing the flavors to meld together.

7. Return the cooked shrimp to the skillet and toss everything together until heated through. Season with salt and pepper to taste.

8. To serve, divide the cooked basmati rice among the pineapple shells. Top each pineapple shell with the pineapple shrimp and beef mixture.

9. Garnish with chopped green onions and sesame seeds.
