Southern Beef and Okra Gumbo with Cornbread Waffles

Ingredients:

For the Gumbo:

– 1 lb. ground beef

– 1 yellow onion, chopped

– 5 medium snack sized sweet bell peppers, chopped

– 2 stalks celery, chopped

– 3 cloves garlic, minced

– 4 fresh small Campari tomatoes or 1 can (14.5 oz) diced tomatoes

– 1 cup fresh sliced okra (frozen is optional) – 2 cups beef broth (homemade recipe is coming soon) -2 cups tomato broth (Knorr)

– 2 tablespoons seasoned all-purpose flour

– 2 tablespoons lard or avocado oil

– 1 teaspoon Cajun seasoning (old bay seasoning will give you a perfect seafood taste)

– Salt and pepper to taste

– Cooked rice for serving

For the Cornbread Waffles:

– 1 cup cornmeal

– 1 cup all-purpose flour

– 1 tablespoon baking powder

– 1/2 teaspoon salt

– 1 cup milk

– 2 eggs

– 1/4 cup melted butter

– 1 tablespoon honey

– Cooking spray

Directions:

1. In a large pot or Dutch oven, heat the lard or avocado oil over medium heat. Add the ground beef and cook until browned, breaking it up into crumbles as it cooks.

2. Add the chopped onion, bell pepper, celery, and minced garlic to the pot. Cook until the vegetables are softened, about 5 minutes.

3. Sprinkle the flour over the beef and vegetable mixture, stirring to coat evenly. Cook for 2-3 minutes to remove the raw flour taste.

4. Pour in the diced tomatoes (with their juices) and beef broth, stirring to combine. Bring the mixture to a simmer.

5. Stir in the sliced okra and Cajun seasoning. Season with salt and pepper to taste. Simmer the gumbo for 20-25 minutes, or until the flavors have melded and the okra is tender.

6. While the gumbo is simmering, prepare the cornbread waffle batter. In a large mixing bowl, combine the cornmeal, flour, baking powder, and salt.

7. In a separate bowl, whisk together the milk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients, stirring until just combined.

8. Preheat your waffle iron according to the manufacturer’s instructions. Spray the waffle iron with cooking spray.

9. Pour the cornbread batter onto the preheated waffle iron and cook according to the manufacturer’s instructions, until golden brown and crispy.

10. Serve the Southern Beef and Okra Gumbo over cooked rice, accompanied by the cornbread waffles. Enjoy the unique flavors of the South in this delicious dish!
